The Best Oatmeal chocolate chip cookies ever!!!

Happy Friday! I have been making these cookies for a few months now so I really just had to let you in on them so you can enjoy them too! I have been searching for ages for the best oatmeal chocolate chip cookies and these are it! They are adapted from a recipe I found on Avery cooks. She puts coconut and nuts in hers but I've omitted them for this family friendly delicious treat! Did you know the secret to making chocolate chip and oatmeal cookies crispy on the outside and thick and chewy in the centre is by putting them in the fridge for a couple of hours before baking??? Why did no one tell me that before??? I can't have them any other way now. So without further adieu...

Chocolate Chip Oatmeal Cookies

In a large bowl,
mix 1 cup flour, 1 cup old-fashioned rolled oats, 1/2 tsp baking powder, 1/4 tsp salt
in a smaller bowl,
melt 1 stick (1/2 cup unsalted butter) then add 1/2 cup packed brown sugar & 1/4 white sugar
add 1 egg and 1 tbsp. real vanilla extract.

Combine wet ingredients into dry, mix well. Stir in 3/4 cup semi-sweet chocolate chips.
Form into perfect round little cookies, 12 medium sized, then flatten onto a parchment lined sprayed cookie sheet. Place in fridge for about 2-4 hours, depending on your schedule up to 5 days. They are good either way, trust me.

Bake for around 12 minutes until golden (do not overcook!) at 350 degrees.

Ava asked me to bake these and as cute as she is, I don't need much convincing.  They are oddly satisfying as well so 1 or 2 and I'm good!
