Snowball cookies!

Crisp light and sweet. Mini dirty snowballs if you will. Rolled in white powdered sugar. Try to resist them if you can, it is impossible! Did I mention how light and crispy they are? I made these last year for the teachers, and have once again. They are just too good and too easy. Recipe below.


Wrap and present them however you like! The dollar store has so many options!



Snowball Cookies*

Preheat oven to 375 degrees.
1 cup unsalted softened butter, whipped in a large bowl with an electric hand held mixer.
Add 1 tsp pure vanilla extract.
Add 1/2 cup icing sugar.
Mix all until fluffy.

Then add 2 & 1/4 cups white flour.
and 1/4 tsp salt.
Mix again.

Stir in 3/4 cup mini chocolate chips.
Roll about 1 tbsp. of dough into balls. Place on a parchment paper lined cookie sheet.
Bake for 7-8 minutes, until bottom is slightly tanned. 
After cooling for 10 minutes roll in a small bowl with some icing sugar.
Makes about 40 cookies
