Easiest Mushroom Barley Rissotto

I am determined to feed my baby girl (4 year old Ava) tasty and healthy lunches when she's not at daycare. I often resort to snack-y style lunching, which is OK from time to time but I want every bite she takes to count. This meal takes 2 minutes to prepare and boasts 10+ grams of fibre and 8 grams of protein. It is also an excellent source of iron.  Did I also mention it's a $4 meal and very easy?


Okay I'll admit to cheating a little and adding a can of Campbell's mushroom soup. But it makes all the difference, and considering the 6 portions this meal makes the sodium content is pretty low (15%).  It's also super yummy. Like 2 bowlfuls yummy. Make it as a side dish or a main course!

Ingredients + Directions

1 cup barley
15 baby carrots cut up
1 large celery stalk cut up
1 can Campbell's Mushroom Soup
1 tsp olive oil
Pepper to taste

Simply rinse the barley and put in a medium sized pot with 3 cups of cold water and olive oil. Bring to a boil and reduce to low. Add in the carrots, celery and cream of mushroom. Simmer on low for close to 1 hour. Stir every once in a while.
