Simple banana muffins + Ramblings

If you like a light fluffy muffin that's got a crusty top (no topping required!) then this is a muffin for you! I'm a sucker for a good muffin and these are good.

I've got a terrible memory when it comes to recipes. I never remember where I've found a particular recipe, so when I make something I love, I need to write it. This is a little concoction of my own.


Ingredients + simple directions

2 large very ripe bananas or 3 small, mashed in a separate small bowl

1 cup unsalted butter, melted in microwave in another bowl

2 cups of flour
+
1 tsp baking soda & 1 tsp baking powder & 1 tsp cinnamon, mixed together with flour in big bowl

1/2 cup brown sugar
+
1/2 cup white sugar, added to melted butter
+
add 1 tsp vanilla to bananas
+
add 1 egg to bananas
+
1 cup of plain sweetened yogurt to bananas

Combine wet ingredients into flour mixture

Divide into 12 muffin baking pan (with paper liners)

Bake at 350 for around 20 minutes

Let cool and enjoy!


I made these for the ride up to Girl Guides winter camp. I was chauffeuring my daughters and a couple of friends. 

Brooklyn was in the middle row with the snack caddy I made for them. She was offering up snacks to everyone, so delighted to be in the company of her big sister's friends.  
The caddy  was loaded with muffins, cheese sticks, apples, granola bars, lemon waters and gummy hearts.  I think I was scared we would somehow be stranded on a desolate road (I am terrible with directions) and I couldn't function my darn GPS, stupid androids :(
Anyway, I love the compliments I get from my kids, they're my most adored food critics and any compliment I get from Brooklyn in particular makes me feel so good. Try these, I promise, they won't disappoint!
